A classic lobster bisque recipe.
Ingredients:
2 lbs. cooked lobsters
2 cups vegetable stock
4 Tbsp. butter
1 Tbsp. tomato paste
1 onion, diced
1 bay leaf
1 carrot, diced
1 tsp. thyme
1 clove garlic, diced
1/4 cup brandy
1 celery stalk, diced
2 cups heavy cream
2 Tbsp. flour
1/4 tsp. paprika
1/2 cup sherry
salt and pepper to taste
Instructions:
- Remove lobster meat and chill. In a skillet, saute garlic and vegetables in butter for 2-3 minutes.
- Remove the vegetables and add sherry to the pan to capture the aroma of the mixture.
- In a large pan, simmer spices, vegetable stock, vegetables, brandy, tomato paste, lobster meat.
- Add the brandy mix, and slowly stir in flour to thicken soup.
- Simmer just until the soup is thickened and comes to a boil.
